📸For Your 👀 Only: The Best Easter Bread Is Baked In An Italian Prison |
In Italy, a very religious country by any means, Easter is celebrated in part with the colomba pasquale — or "Easter Dove" — a flour-based cake shaped like a bird and topped with almonds. Much like the ubiquitous chocolate rabbits or easter eggs in the United States, the colomba is a sign of spring for Italians when it appears on supermarket shelves or in bakeries. One of the places that makes the best colomba is one of the most surprising — the Due Palazzi prison on the outskirts of Padua, Italy. The bakery, Pasticceria Giotto, began in 2005 and is staffed by 46 of the approximately 500 inmates. Most of the inmates are serving long sentences, and each of the bakery workers is hired and receives a paycheck. |
In Italy, where the prison system is overpopulated, the national average of recidivism is 70%, according to the Ministry of Justice. The recidivism rate of prison inmates who work in a program such as the bakery drops to 5%. "For me, just this data should be enough to make us understand the uselessness of punishment for its own sake and the importance of an educational path," said photographer Matteo de Mayda. "Moreover, I like to think how those same hands judged guilty in the past manage to create something good, right, and a symbol of a moment of celebration like this." Matteo Concolato, a pastry chef who helps supervise the inmates as they bake, said he had witnessed the program's benefits firsthand: "One thing that gives a lot of satisfaction is to see a guy who may never have worked before and comes from years in prison who gradually becomes passionate, acquires a sense of responsibility for what he is doing, begins to trust himself and others again," he said.
