Eat veggies for breakfast

The Dietary Guidelines for Americans recommends 2 ½ cups of veggies and 2 cups of fruit per day. If you're finding it hard to squeeze that all in, don't EGG-nore breakfast as a great opportunity to eat your veggies. (Sorry, we couldn't help it!)

But seriously, why not toss some veggies into your morning scramble?

For today's challenge: Set aside any idea that breakfast has to look a certain way and try some veggies! Here are some ideas:

  • Saute greens, squash, or mushrooms and enjoy with eggs (add to a scramble, fold into an omelet, or simply enjoy on the side).
  • Dice up some sweet potatoes and onions and make a hash; combine this with black beans and you've got a winning combo!
  • Make a breakfast sandwich with tomato and salad greens.
  • Heat up some veggie soup — warming on a cool morning.
  • Toss some spinach into your favorite smoothie recipe.
  • Last night's leftovers? Why not!

Don't sweat it if you don't have fresh veggies to spare. Frozen and canned veggies work, too!
