1 cup almond flour -
½ cup gluten-free oat flour -
1 tsp baking powder -
½ tsp baking soda -
½ tsp sea salt -
1 ½ tsp pumpkin pie spice -
½ tsp cinnamon -
2 pasture-raised eggs -
¾ cup organic canned pumpkin -
¼ cup maple syrup or raw honey -
¼ cup unsweetened almond milk -
2 Tbsp melted coconut oil or avocado oil -
1 tsp vanilla extract -
⅓ cup dark chocolate chips (or cacao nibs for sugar-free option) Instructions: -
Preheat oven to 350°F and line a muffin tin with liners. -
In a large bowl, whisk together almond flour, oat flour, TUSOL smoothie packet, baking powder, baking soda, salt, and spices. -
In another bowl, whisk eggs, then mix in pumpkin, maple syrup, almond milk, melted oil, and vanilla. -
Combine wet and dry ingredients until smooth. Fold in chocolate chips. -
Divide the batter evenly among 10–12 muffin cups. -
Bake for 22–25 minutes, or until a toothpick comes out clean. -
