I'm Making a Last-Minute (Super Easy!) Sweet Treat for Valentine's Day
|
I've never been a huge Valentine's Day person. I mean, way back in high school, I loved the thrill of those candygram deliveries — the tiny conversation hearts you could send to friends (or maybe-more-than-friends), scribbling your message of "like" in fewer characters than a tweet. There was always a little mystery, a little surprise. And of course, my friends and I made sure to send them to one another, because that's what best friends do. Since then? Whether single or paired, I've mostly let Valentine's Day pass by without much fanfare. But this year, I decided to whip up something sweet for the two boys in my house (Colin and Grey) — a dessert that's pure comfort in the middle of winter and ridiculously sentimental for me. It's a recipe my grandmother and mom both made when I was a kid, and now suddenly I'm seeing it all over my Pinterest feed: Chocolate Cobbler (though my grandmother called it Brownie Pudding).

It's one of those magically easy cakes that make their own chocolate sauce — you mix it up, pop it in the oven and somehow, when it's done, there's a crispy, crackly top (not quite a crust) and a warm, fudgey sauce underneath. I hadn't made it since high school, but let me tell you — it took less than 10 minutes to throw together, and it was so worth it. |
READY IN 30: The best way to eat it, in my opinion? Straight from the dish, still warm, with a big scoop of vanilla ice cream melting into all that chocolate goodness! |

CHOCOLATE COBBLER (a.k.a. BROWNIE PUDDING) |

For cake 1 cup flour 3/4 cup sugar 2 Tbsp cocoa 2 tsp baking powder 1/2 tsp salt 1/2 cup milk 2 Tbsp oil 1 tsp vanilla
For sauce 3/4 cup brown sugar 1/4 cup cocoa 1 3/4 cups boiling water |
| 1. Preheat oven to 350˚F. Mix first 5 dry ingredients. Stir in milk, oil and vanilla. 2. Pour into greased 8" or 9" square, or similar, baking pan (I used an oval Corningware casserole dish). 3. For sauce, mix dry ingredients and sprinkle over the top. Pour boiling water on top. 4. Bake for 30 to 35 min., until you see a nice crust on top and sauce bubbling up the sides. 5. Remove from oven and let set 10 min. before serving. |

I've been trying to be better about moving more — walking in particular — but I'll be honest, this winter has thrown me off. Between the bitter cold and the recent snow, I've slipped big time. So when I saw this new study about how much daily movement could actually help extend our lives, it was the little nudge I needed to get back on track. If you're feeling the same way, give it a read! Walking with a friend makes it so much easier (and it's a boost for mental health too), but when that's tricky to schedule, I've been listening to books while I walk. Periods are normal, but kids pointing them out in their sketches is something else. Australian woman Penny Rohleder shared a photo of her son's drawing on the Facebook page of blogger Constance Hall on Jul. 25, which well, says it all.
